Quick and easy chicken roast. Chicken with crushed red chillies and shallots.

Ingredients :
- Chicken – 300 gm
- Shallots – 200 gm
- Dry Red Chilly – 12
- Curry Leaves
- Sliced Coconut- 2 tbsp
- Garlic (julienned) – 2 tbsp
- Coconut Oil – 5 tbsp
- Turmeric Powder – 1/2 tsp
- Salt – 3/4 tsp
Directions:
1. Add 5 tbsp of coconut oil into a pan
2. Once the oil is hot, fry the dry red chillies
3. Once the red chillies are fried, take them out from the oil
4. Fry the shallots in the same oil
5. Once the shallots are fried, take them out from the oil
6. Add 2 tbsp of sliced coconut and 2 tbsp of julienned garlic and mix
7. Add curry leaves and mix
8. Add 1/2 tsp of turmeric powder and 3/4 tsp of salt and mix
9. Now add the chicken pieces and mix
10. Close and cook for 20 mins on a low to medium flame/temperature
11. While the chicken is being cooked, crush the fried red chillies using a motar pestle. You can even use a mixer grinder
12. Crush the fried shallots in the motar pestle
13. After 20 mins open the lid and check if chicken is cooked
14. Chicken is cooked well
15. Add the crushed shallots and mix
16. Add the crushed dry red chillies and saute it for 4-5 minutes
17. Add the curry leaves, mix it and take it off from the stove
18. Dry chicken roast is ready to serve
