Tomato
One healthy tomato plant can provide enough fruit for a family of four. If you have a larger family or really enjoy tomatoes, consider planting multiple plants.
Spinach
Spinach is easy to grow and can be harvested multiple times. Plan for about three to four spinach plants per person per week for a regular diet.
Bell Peppers
Depending on your family’s consumption, you may want to plant two to four pepper plants per person. Each plant can produce several peppers throughout the season.
Cucumbers
Cucumber plants are prolific producers. One or two plants per person should provide plenty of cucumbers for salads and snacks.
